INGREDIENTS:
- 1kg pork belly (liempo)
- 4 medium banana (saba), sliced
- 2 medium carrots, sliced
- 5 cloves garlic, crushed
- 1 medium onion, sliced
- 1 tsp ground white pepper
- 4 pcs. peppercorn, crushed
- 3 pcs. dried bay leaves
- salt to tastemsg/ seasoning mix (optional)
- 2 cups water
- 1/8 cup vinegar
- 1/4 cup soy sauce
- 1 Tbsp cooking oil, for frying
PROCEDURE:
1. In a mixing bowl, combine the pork, some garlic, soy sauce, vinegar, ground pepper, peppercorn, bay leaves, salt, and seasoning. Mix well.
2. Cover and refrigerate for 40 mins - 1 hour.
3. Remove pork from marinade, set aside.
4. In a large cooking pan, heat the cooking oil.
5. Saute the remaining garlic, onion.
6. Add the pork, fry until light brown.
7. Remove excess oil.
8. Pour in the marinade, add the carrots. Simmer for 2 mins.
9. Add the banana. Simmer for 5 mins.
10. Taste it! :-)
11. Correct seasoning according to desired taste.
12. Transfer to a serving bowl.
13. Serve hot, share, and enjoy!
