Ube Roll Cake Recipe


INGREDIENTS:

  • 1 cup cake flour
  • 6 egg whites
  • 6 egg yolks
  • 1/4 cup refined sugar
  • 1/4 cup ube powder
  • 1 tsp baking powder
  • 1/2 tsp ube flavor
  • 1/4 cup water
  • 1/2 tsp cream of tartar
  • 3/4 cup refined sugar (meringue)
  • 1/2 tsp salt

FILLING:

  • 2 Tbsp ube powder
  • 1/2 cup all purpose cream
  • 1/4 cup powdered sugar

Beat chilled all purpose cream. Add sugar. Mix thoroughly.


PROCEDURE:

1. Preheat oven to 350 Degrees Fahrenheit. Grease bottom and side of jelly roll-pan lined with wax paper. Grease again and set aside.
2. Beat egg yolks, then add sugar. Stir until clear and sugar is dissolved.
3. Add cake flour, ube powder, baking powder alternately with water. Mix well.
4. Pour to meringue mixture. Cut and fold until well blended.
5. Bake for 15 mins.
6. Remove from pan, spread and fill, then roll.
7. Chill for atleast 30 mins.
8. Serve, share, and enjoy!
